Jo’s Apple Cake

I have had lots of comments about my Orange & Almond cake so I thought I should give you another yummy cake recipe. This one is so quick to whip up if you have a couple of apples on hand and visitors are about to arrive.

At home, we call this “Jackie’s Apple Cake”. My friend Jackie submitted it to our preschool fundraising cookbook project about 40 years ago so I think I have made it countless times.

It’s quite a crumbly cake so good for sweets with cream or ice cream, straight from the oven.

Jo’s Apple Cake

Ingredients
100g butter softened
1 cup caster sugar
1 egg
1 cup SR flour
1/4 tsp cinnamon
2 apples, cored & chopped but not peeled
A slurp of milk, maybe about 2 tbs

Method
Heat the oven to 200 degrees
Line a 23cm tin with baking paper
Beat the caster sugar into the softened butter
Beat in the egg, beat in the flour & cinnamon
Mix in the chopped apples & milk

Pop the mixture into the tin and then into oven for 40 to 45 minutes.
