Jo’s Orange and Almond Cake

What a glorious day it was for Mothers’ Day on Sunday. The sun shone all day and there were so many families out and about in our area. It feels locally as if we have been “discovered”! We’re always threatening to put up a gate to keep our area pristine, but on Sunday you couldn’t get a park on the 4-wheel drive road to Box Head. The whole area is still wilderness, covered with walking tracks and the occasional camping site. Views go across Lion Island to Palm Beach and beyond.

The aim of all my cooking is that it has maximum taste for minimum effort. Well, any mother who was doing the cooking on Sunday would have enjoyed the simplicity of this recipe.

Orange and Almond Cake (gluten free)

2 oranges
3 eggs
1 cup caster sugar
300g almond meal
1 tsp baking powder

Line a 20cm cake tin with baking paper and preheat the oven to 170C degrees.

Pop the oranges in a bowl with a lid or cover with glad wrap and pop in the microwave for eight minutes. Allow to cool, then cut open, remove the seeds, chop roughly, pop into a food processor and grind to a pulp. Set aside.

Beat the eggs with the caster sugar. Add the almond meal, orange and baking soda. Pour the mixture into the cake tin and place in the oven for 50 minutes. Done!


The syrup is optional but makes it a bit special for entertaining.

1 orange
half cup water
half cup sugar

Remove the peel of the orange with a zester with 4 holes – it pulls the peel off in long strips. If you don’t have one, use a vegetable peeler and take off the peel in long strips which you can then cut into thin strips.

Juice the orange.

Into a saucepan put juice, water, sugar and rind and cook gently until a thickened syrup is formed!

Pour over hot cake piling the rind in the centre.
